Ingredients
- 1 portion of salmon fillet
- 1 potato diced
- 50ml natural yoghurt
- Zest and juice of 1 lime
- 1 tlbsp caster sugar
- Small bunch of fresh parsley (chopped)
- 2 Knobs of butter
- 2 Tsp olive oil
- Large pinch Cajun seasoning
- Salt & pepper
Method
Sauté the potatoes off in a wok with a knob of butter and 1 tsp of olive oil and the Cajun seasoning until golden brown. In a separate frying pan heat the other knob of butter and the tsp of olive oil, when hot place the salmon in leave for 2 minuets then carefully turn the salmon over, turn the heat down and finish cooking for a further 5-6 minuets. In a separate bowl while you are waiting for the salmon and the potatoes to finish mix together the yoghurt, zest and juice of the lime, caster sugar and chopped parsley. When the potatoes are golden brown bring them to the centre of you serving plate on the top of that place that succulent piece of salmon and drizzle with the lime and yoghurt dressing, garnish with a wedge of lemon and BON APETIT!
