recipes : Asparagus

Asparagus wrapped in crispy Parma ham accompanied with a basil oil dressing.

 

Ingredients

  • 5 asparagus spears (per person)
  • I slice of Parma ham
  • 4-5 mixed salad leaves
  • Small bunch fresh basil (finely chopped)
  • 1clove garlic (finely chopped)
  • 1 tsp lemon juice
  • 50ml olive oil
  • Salt & pepper

Method

  • Method

    Blanch the asparagus spears in boiling water then re-fresh in ice cold water, after that wrap the bunch of asparagus with the Parma ham and grill until the Parma ham has gone crisp. While that is grilling in a separate bowl add the basil, garlic, lemon juice, the olive oil and then salt and pepper to taste stir together adding more seasoning if necessary. Arrange the salad leaves in the centre of your plate then place the asparagus on top and drizzle with the basil oil. Then when all is done ENJOY!
